SWEET SATURDAY

What might help?

How about a loaf of banana bread.


I baked this up the other day and I can tell you it makes everything else seem trivial.


Those white flecks imbedded in the loaf are shredded coconut.

The recipe comes from Mark Bittman's How to Cook Everything cookbook and he calls the coconut his secret ingredient.

  2. I find half a grated carrot adds tons of moisture, without changing the taste. The cocoanut would add a nice touch though.

  3. The only banana bread in my recent memory was at Bob Evans restaurant. They do a good job but I'm guessing not as good as you do. Looks delicious!

  4. Ooooohhhh - I LOVE banana bread! I like Bob Evans' banana bread too - and it has the advantage of not being a whole loaf in my house, which I would eat within one day. Ha!
