Anything with prosciutto usually is, at least in my book.<BR/><BR/>If you like prosciutto and asparagus, here is an easy one.<BR/><BR/>Fresh asparagus (ends trimmed off)<BR/>prosciutto<BR/>Cream cheese<BR/>Sea Salt<BR/><BR/>Place asparagus into a microwave safe shallow dish. Put about 1/3 cup of water (just enough to cover bottom of dish) Cover with plastic wrap. Microwave for about 3 or 4 minutes. Take out and immediately put asparagus under running cold water. You are basically just blanching or lightly steaming the asparagus. You still want it to stand on it's own and be a brilliant bright green color.<BR/><BR/>Take one piece of prosciutto and spread a very thin layer of cream cheese on it. (This is the glue.)<BR/><BR/>Wrap prosciutto around asparagus starting just under the point and spiral down. (you want the points to be sticking out, not wrapped.)<BR/><BR/>Arrange on plate, sprinkle points with a small bit of sea salt. Serve with cured olives, or artichoke hearts or any other lovely antipasto goodies you can find.<BR/><BR/>I make this up for parties and I never bring any back home. It is usually the first dish gone.<BR/><BR/>I am roasting a chicken today. The store had this lovely long branches of fresh rosemary, so grabbed them, some lemons, some kalamata olives and lots of garlic.
