SWMBO ROASTS!

It occurred to me that every time (rarely) I bake or cook something I have to post on this blog bragging about it.

Regardless of the fact that I have oft boasted about my wife's abilities in the kitchen, I rarely have shown the results of her work.

So I won't do that today either.

But what I will show you is a sheet pan recipe that she prepared.

The photo is as it was ABOUT to go into the oven.

Left to right what you see here are some mini potatoes, quartered white onions, carrots, red peppers, yellow peppers, chicken breast pieces marinated in an Oriental sauce, and slices of red onion.

And wonderful reporter that I am, I didn't get a photo as it came out of the oven and before I pounced on and devoured most of it.

Will it suffice for me to say it was delicious?

  1. It looks delicious, Bruce. My only addition, or replacement, would be thighs instead of chicken breasts, but that's just me. Congratulations to Judy, the cook.

    1. I keep reading from the food mavens that thighs are more tasteful than breasts (chicken, that is). But Judy has a thing about fat and prefers the white meat.

  3. Breasts are best! I agree with Judy. That looks delicious, minus the peppers--perhaps with an addition of fresh mushrooms which I do love.

    1. The peppers are all sweet peppers. Mushrooms ala Bruce were also served.

  7. 😀 Your eagerness to eat and forgetting to take the after picture was a compliment to the chef.

  8. That does look yummy. It's been a while since we've had roasted veggies. I think it might be time. Yum!

  10. That looks yummy. I often do something similar with sausages. Nice with a few squirts of honey too!

  11. Pounced on it and devoured it? Just like a hungry wolf! I am about to do something similar with slices of loin pork.
