Yesterday, I went through a 3-ring binder Judy had given me years ago with a few relatively easy recipes in it that I might try.
Over the years I hadn't cooked many of them but I had added and added to it until it was bulging and dangerous to open!
So I examined them all with a critical eye and tossed many of them.
Some were too difficult.
Some were too outdated.
Some were not something we might ever eat again.
So the binder is now slimmer.
No longer the monster that one feared to confront.
One of the recipes that I kept was for a breakfast casserole and, having all the ingredients in house, this morning I made it to start the day.
It was pretty good.
Pork sausage, bread cubes, eggs, milk, dry mustard, salt and pepper.
Easy-peasy.
We did find the addition at table of a dash of Sriracha sauce kicked it up a notch.
But it's a keeper and went back into the binder.
By the way, it was perfect for a very cold morning here of 19 degrees F.
The birdbath water was frozen solid and we're waiting for today's very bright sun to thaw it.
A surprise visitor to it, and a disappointed one I'll wager, appeared to be a female robin.
It seems like the wrong time of year for robins but there she was.
Briefly.
She wasn't counting on an iced-over birdbath.
Maybe I should have invited her in to share our breakfast casserole.
Part of the January clean out should be cookbooks and recipe files. You are so right that we will never make some of them nor do we cook like that anymore. Might do just that today!
ReplyDeleteWe're starting to clear out the "dead wood" in our home. At our ages, there's a lot to toss but it's hard. Have to be brutal.
DeleteA breakfast casserole sounds very exotic to this yogurt and muesli person! Sounds like it hit the spot.
ReplyDeleteJudy has yogurt and toast every day. I asked her if she missed it today. She said she only has it because it's quick and easy. 😊
DeleteIf your birdbath is concrete, and you are having below freezing temps there, you really might want to think about tarping it. Water freezing inside can damage the concrete. But yes. That recipe is a keeper, and (secret...) it is something that makes a wonderfully comforting supper from time to time. We use cheese and add mushrooms, peppers, onions in it as well.
ReplyDeleteI forgot to mention there was cheese in mine too.
Deletethecontemplativecat here. That looks and sounds delicious.
ReplyDelete'Twas.
Delete19 degrees--what the heck! My geraniums are still alive. Must you really taunt me, Bruce? One of my favorite things in the world is a breakfast casserole. I would definitely add some salsa to that delicious sounding mix.
ReplyDeleteOooh, salsa sounds great on it!
DeleteThe other water sources were probably frozen so she tried yours. we have a few robins that stay all year. We always get them on the bird count.
ReplyDeleteRobins are crazy!
DeleteI bet she'd have liked that casserole! I think I would too, actually.
ReplyDeleteI have a binder like that. Good idea to thin it out.
19°? In Arizona??
Granny Sue, we're not in Phoenix. We're about 80 miles northwest and about 4,000 feet higher. Our elevation is about the same as Denver's.
DeleteI'm not a breakfast person, but that looks good enough to eat! Better than toast and yogurt.
ReplyDeleteLOL!
DeleteOur low was about the same as yours. Also enough snow up in the mountains that Andy had to drive home very slowly and will stay home tomorrow. Stay safe and warm!
ReplyDeleteNo snow here, thank goodness! I hope Andy is careful.
DeleteI went through my recipe binder about six months ago and ditched about 75% of it. Even what's left I may never make again apart from the tried and true favourites.
ReplyDeleteI totally understand.
DeleteThe breakfast casserole sounds like it would be a good option - once in a while.
ReplyDeleteYes, once in awhile it tastes good.
DeleteLooks tasty, and the birds would like enjoy it.
ReplyDelete😊
DeleteI should clean out my recipes, too, as I really don't make many of the ones I have saved in my recipe box. I do enjoy an egg casserole and your dish looks similar to one I make - just added pork sausage and cheese to my shopping list! Thanks, Bruce!
ReplyDeleteJudy said some onion would be a good addition.
DeleteI fix breakfast casseroles when the family comes to visit. It's a good feed-the-group meal. I like to add onion, mushrooms, red and green peppers, and broccoli. Gotta get those veggies in somehow!
ReplyDeleteWhen my daughter made a breakfast casserole at my house she used a package of croutons for the bread. That added flavor without effort.
ReplyDeleteLinda Sand
That sounds good.
ReplyDeleteWhen our birdbath freezes over, I sometimes pour warm water into it to thaw it at least for a short time. Not TOO warm, obviously -- you don't want bird soup!
