CAJUN GOODNESS

We had to make a trip to Phoenix today to take care of some business.  But one has to eat, doesn't one?  SWMBO picked the eatery . . one of our favorites even though it is a chain . . Pappadeaux Seafood Kitchen.  It just looks like New Orleans to me.


We like to eat in the bar, where you can either sit "at the bar" or in adjacent big leather booths.


As befits a drinking as well as eating establishment, a large assortment of different types and shapes of glassware is sparkling and ready.



Try as I might, I can't seem to get away from the blackened catfish fillet over dirty rice.  I order it every time I go here.


And today that was accompanied by a Sam Adams Octoberfest brew in an iced flagon.



By the way, we did precede the entree with a shared appetizer:  six Oysters Pappadeaux.  They are baked on the half shell with crabmeat and spinach and topped with Hollandaise sauce.  Unfortunately, we dug into them so fast I forgot to photograph them.  But trust me.  They, like everything else, are delicious.

We were seated next to a very large man and his wife who we learned were visiting the restaurant for the first time on their 2nd wedding anniversary.  He was declaiming loudly about how good the food was and I chatted with him briefly.  He said he wanted to try alligator so he had the appetizer.  He was so delighted with it he ordered an alligator entree.  And he told the waitress he had never left a restaurant with unfinished food in a "doggy bag" before.  But he told me this restaurant was his new "supremo!" 

We, too, by the way, had doggie bags with us as we left.  And as I shook my neighbor's hand and congratulated them once again on their anniversary, I left him with a quick "See ya later, alligator!"

SUNDAY DINNER

SWMBO outdid herself tonight.

First, chopped veggies.


Then, a spice rub.


And a Julia Child.  That is, lots of butter.


The veggies were for a Cajun rice recipe.




The spice rub coated both sides of a couple of catfish filets.


Next, to the barbecue grill, to heat up a black iron skillet.


And then the fish get blackened.



By the way, do NOT try to do this part on your stove.  I don't think any fan, other than an industrial kitchen fan, can keep your smoke detector from going off if you do.

And, at last, it's on the plate and on the table, accompanied by a large ear of corn on the cob, a salad and a nice glass of wine.  Bon appetit!


Lest anyone be surprised, it was all delicious.

FRIDAY

I had a great day yesterday.  SWMBO was feeling akilter so I met the BRD for lunch at the famous Iron Springs Cafe.  We both had blackened catfish with a remoulade sauce, which is a specialty of the house and was absolutely fabulous.  Every one was smiling.

Incidentally she got quite a compliment from a woman who had been sitting across the aisle from us.  As she got up to leave, she leaned in and told the BRD "You are the most beautiful woman I've ever seen."  Wow!  I told the woman, "that's why I call her the BRD."

She asked what that meant and I told her the "Beautiful Rich Daughter."  

Afterwards, the BRD said she'd been getting all kinds of compliments since she'd let her hair color go "natural".

Speaking of natural, I was thrilled by this view on my way home after lunch.


Just west of Glassford Hill Road was a huge herd of Pronghorns.  I love seeing them.  SWMBO said she had once read that this area, gradually being lessened by the encroachment of civilization, was a traditional "birthing area" for the Pronghorns.  It seems, in spite of busy roadways and new homes, they return here year after year.
