For all of you foodies, or just plain old cake lovers, here's what my birthday cake looked like after the first tasting yesterday.
It's my favorite - carrot cake.
Judy's recipe includes some dried apricots and apple butter.
If it looks dense, it is.
Densely packed with delicious flavor.
I had two slices on my natal day.

Also MY favorite! Ours has pineapple in it and is also moist and dense. How wonderful! Leff-T's also has good carrot cake!

Carrot cake is my second favorite cake. Hummingbird cake is #1 for me, as long as it has nuts, coconut and pineapple in it. And cream cheese frosting. That looks deliciously dense!
