Today the extremely overworked Catalyst takes the day off and turns Oddball over to his beloved Judy, aka She Who Must Be Obeyed.
A while back we acquired a recipe for a "Lemon Sheet Cake" that has become a favorite for many reasons.
It is quick and easy to make and it tastes great.
But it requires a boxed cake mix AND a can of lemon pie filling.
Therein, we find, lies the problem.
Canned lemon pie filling has become elusive and very hard to find in our area.
Maybe all of our neighbors are making the same cake.
It could happen.
This week when we did our online grocery order from Walmart (to be picked up in the parking lot), we tried again.
As the order was being finalized we were informed that the lemon pie filling was not in stock in this store, but they would ship it to us.
What?
No, No, just cancel that!
But there was no way on that page to do that.
Sooooooo.....four days later the doorbell rings and lo and behold, there is a box containing ONE CAN OF LEMON PIE FILLING.
Shipped all the way from Sparks, Nevada!
Now, someone is going to have to bake a cake!

ReplyDeleteYou HAVE to bake that cake after the lemon pie filling traveled all that way. PS: I believe that this recipe should be posted on line so that we all may order pie filling from Sparks, Nevada.

I checked our Walmarts, we have 5 of them here in Florida where we live and all 3 brands have to be shipped, 2 or 1 day 1 is 3 days. you could use Lemon pudding/pie filling by Jello or great value, just mix it up and mix instead of the can. this is totally ODD
ReplyDeleteInteresting! I order a lot of things I can't find at the store from Amazon. Things like black walnuts, stem ginger, canned almond paste. You can get anything you want at Alice's Restaurant....er...I mean Amazon.

Pie filling in general can be expensive and hard to find. I love finding new recipes although I'm not a huge fan of lemon. Is it a recipe that could be modified with a different flavor of pie filling? (such as apple?)

ReplyDeleteI haven't seen a can of lemon filling in years! Try ordering from Amazon. Wanted some gooseberry jam and cans of gooseberries. Worth a try.
ReplyDeleteWow, that is customer service (I think). Did you have to pay for shipping? Now I'm curious to see if the Wal-Marts here in Phoenix have any on their shelves. That lemon cake sure must taste delicious. Maybe share the recipe down the line?

I have never seen canned lemon pie filling. We have boxed lemon pie mix, with separate sachets of dry ingredients, one mixed with water becomes the pastry and the other, mixed with water and the yolks of two eggs, then cooked while stirring, becomes the lemon filling. the unused egg whites are then whipped to make the meringue topping. I haven't bought this for years, but now I want to, and I bet it isn't available because there are delivery shortages everywhere.
