CONFUSION

Today is May 5th, or in Spanish - cinco de mayo.

In some parts of Mexico and widely in the United States of America, Cinco de Mayo is celebrated with tacos and beer.

On May 5th, 1862, a vastly outnumbered Mexican force defeated the French army in what became known as the Battle of Puebla, southeast of Mexico City.

But the war of independence from Spain is said to have begun on September 16th, 1810.

That date is considered as Mexican Independence Day and it's a much bigger celebration in Mexico.

Probably because "cinco de mayo" is easier to say then "dies y seis de septiembre" Americans hoot and holler on May 5th to celebrate what they mistakenly take to be Mexican Independence Day.

So I'll not drink a bottle of the Mexican beer Negra Modelo that rests in my refrigerator nor indulge in tacos or enchiladas today.

Instead we'll dine on Judy's wonderful bean soup and cornbread and I'll show you yet a different recent meal: a store-bought chicken pot pie alongside some steamed green beans.

Just as good.


And no, no one painted it.

It's altered to look like a watercolor through the wonders of computer wizardry.

Cinco de mayo marks the Mexican rejection of French forces to take over. I only learned recently about this French attempt, the nerve! At least when they intervened in the American Revolution they were invited in.
Chicken pot pie is the solution to a lot of problems.

I like Negra Modelo! Is that a Marie Callender's chicken pot pie? My late husband used to say they were the best.

Iron skillet
1 cup corn meal
1cup flour
2 eggs
2 tlbs melted butter
1 cup buttermilk (milk will do in a pinch)
Dash of salt, pepper, 2 tlbs sugar
optional...can of hatch chilies
Mix ingredients, heat oven to 375f, heat skillet on stovetop with a pat of butter.
Pour cornbread mix into hot skillet, it should 'sizzle'
Bake until toothpick in middle comes out clean. +- 50 mins

Nearly identical to Judy's recipe except she uses bacon grease in the skillet until it's melted, then stirs it into the mix, before pouring it back into the cast iron pan.

Same as mine, or pretty close. I use self-rising flour. Mine is done much faster, probably altitude difference?

thecontemplativecat here. Cinco de Mayo is big here in San Diego world. In classroom, it was a day to discuss Mexico's stand against France. Kicking the last of the European countries out was a big deal.

Back on the Cinco de Mayo 1975, I did a reporter package explaining this. I think it was my first RP. I've had a few beers since then on the Cinco and Diez y Seis. I like to celebrate.
